- Heat olive oil in a large pot over medium heat.
- Add diced onions and cook until translucent, about 5 minutes.
- Stir in minced garlic, ground cumin, and smoked paprika; cook for another 2 minutes.
- Add the chickpeas and stir to coat with the oil and spices.
- Pour in the vegetable broth, and bring to a simmer.
- Season with salt and pepper; let simmer for 15 minutes.
- Add chopped spinach and cook until wilted, about 2-3 minutes.
- Taste and adjust seasoning if necessary before serving.
