Ingredients
  

  • 2 cups cooked chicken shredded
  • 1 cup mixed vegetables carrots, peas, corn
  • 1/4 cup unsalted butter
  • 1/4 cup all-purpose flour
  • 1 1/2 cups chicken broth
  • 1/2 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh parsley chopped
  • 2 cups biscuit mix
  • 2/3 cup milk for biscuits

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, melt the butter over medium heat.
  3. Add the mixed vegetables and cook until they are tender, about 5-7 minutes.
  4. Sprinkle the flour over the vegetables and stir well to combine.
  5. Slowly whisk in the chicken broth and milk, cooking until the mixture is thickened, about 3-5 minutes.
  6. Stir in the shredded chicken, garlic powder, onion powder, salt, black pepper, and parsley, mixing until well combined.
  7. In a mixing bowl, combine the biscuit mix and milk to form a dough.
  8. Spoon the chicken mixture into a greased baking dish.
  9. Drop spoonfuls of the biscuit dough over the chicken mixture.
  10. Bake in the preheated oven for 25-30 minutes or until the biscuits are golden brown.
  11. Let cool for a few minutes before serving.
