Ingredients
  

  • 1 lb ground chicken
  • 1 medium zucchini grated
  • 1 cup fresh corn kernels about 2 ears
  • 1/4 cup finely chopped red onion
  • 1/4 cup fresh cilantro chopped
  • 1 egg beaten
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Method
 

  1. Prep the ingredients by grating the zucchini, cutting corn from the cob, and chopping onion and cilantro.
  2. In a large bowl, mix the ground chicken, grated zucchini, corn, red onion, cilantro, beaten egg, garlic powder, salt, and pepper until just combined.
  3. Form the mixture into 4 equal patties, about 1 inch thick.
  4. Preheat the grill or a skillet over medium heat. Lightly oil the grill grates or pan to prevent sticking.
  5. Cook the patties for about 5-6 minutes on each side, or until they are fully cooked through (internal temperature of 165°F).
  6. Let the patties rest for a few minutes before serving, allowing the juices to redistribute.
  7. Serve the burgers on your choice of buns with toppings like avocado, tomato slices, or a tangy sauce.
