Ingredients
  

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter melted
  • 3 8 oz packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 2 cups peeled and diced apples such as Granny Smith
  • 1 teaspoon ground cinnamon
  • 1 cup caramel sauce store-bought or homemade

Method
 

  1. Preheat your oven to 325°F (160°C).
  2. Prepare the crust by mixing graham cracker crumbs and melted butter.
  3. Press the crumb mixture into the bottom of a springform pan.
  4. Bake the crust for 10 minutes; remove and let it cool.
  5. In a large bowl, beat the softened cream cheese and sugar until smooth.
  6. Add the eggs one at a time, mixing well after each addition.
  7. Stir in vanilla, diced apples, and cinnamon until combined.
  8. Pour the cheesecake batter over the cooled crust.
  9. Bake for 50-60 minutes, until the edges are set but the center is slightly jiggly.
  10. Remove the cheesecake and let it cool to room temperature before refrigerating.
  11. Once chilled, drizzle with caramel sauce before serving.
