Preheat your oven to 425°F (220°C).
Wash and scrub the potatoes thoroughly, then pat them dry.
Make several evenly spaced cuts across each potato, stopping about 1/4 inch from the bottom.
Place the potatoes on a baking sheet lined with parchment paper.
In a small saucepan, melt the butter over low heat and add minced garlic.
Brush the garlic butter over and between the cuts of each potato, reserving some for later.
Sprinkle salt and pepper generously over the potatoes.
Bake the potatoes for 40-50 minutes, basting halfway through with the reserved garlic butter.
Remove the potatoes from the oven and sprinkle them with the cheeses.
Return the potatoes to the oven for an additional 10-15 minutes until the cheese is melty and golden.
Garnish with fresh parsley before serving.
