Ingredients
  

  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • 1/2 red onion finely chopped
  • 1 cup bell peppers diced (mixed colors)
  • 1/2 cup black olives pitted and sliced
  • 1/2 cup salami diced
  • 1/2 cup mozzarella balls or cubed mozzarella
  • 1/4 cup fresh basil chopped
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • Salt and pepper to taste

Method
 

  1. Prepare the vegetables.
  2. Combine the chopped vegetables in a large bowl.
  3. Add the salami and mozzarella.
  4. In a small bowl, whisk together olive oil and red wine vinegar.
  5. Pour the dressing over the salad.
  6. Season with salt and pepper.
  7. Fold in the fresh basil.
