Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1 cup shredded mozzarella cheese
  • 1 medium onion thinly sliced
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup breadcrumbs for coating
  • 1 egg for binding

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat and add the sliced onions.
  3. While the onions are cooking, prepare the chicken breasts by placing them between two sheets of plastic wrap and gently pounding them to an even thickness.
  4. In a bowl, combine the cooked onions, mozzarella cheese, garlic powder, salt, and pepper.
  5. Place a few tablespoons of the filling on one end of each chicken breast, then roll them up tightly.
  6. Dip each rolled chicken breast first in beaten egg, then coat with breadcrumbs.
  7. Arrange the coated chicken rolls on a baking sheet and bake for 25-30 minutes, or until golden and cooked through.
  8. Remove from the oven and let the chicken rolls rest for a few minutes before slicing.
