Ingredients
  

  • 1 pound boneless skinless chicken breasts
  • 2 cups corn fresh, frozen, or canned
  • 1 tablespoon olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 8 small corn tortillas
  • 1 cup crumbled queso fresco
  • Fresh cilantro chopped (for garnish)
  • Lime wedges for serving

Method
 

  1. Preheat your grill or stovetop pan to medium-high heat.
  2. In a mixing bowl, combine olive oil, chili powder, cumin, garlic powder, salt, and pepper.
  3. Add the chicken breasts to the bowl and toss to coat them evenly with the marinade.
  4. Next, grill the chicken for about 6-7 minutes on each side, or until cooked through.
  5. While the chicken is grilling, prepare the corn by grilling or charring it until golden.
  6. Once the corn is ready, remove it from the grill and combine it with the chicken in a bowl.
  7. Warm corn tortillas on the grill for about 30 seconds on each side.
  8. Assemble your tacos by filling each tortilla with the chicken and corn mixture.
  9. Top with crumbled queso fresco and fresh cilantro.
  10. Serve with lime wedges on the side.
