Slow-Cooked Beef Stroganoff for Cozy Nights

Rich and hearty, this Crock Pot Beef Stroganoff features tender beef simmered in a creamy, savory sauce, making it an ideal choice for cozy family dinners or gatherings where comfort food shines.

Ingredients
  

  • 2 pounds beef chuck roast cut into strips
  • 1 medium onion sliced
  • 8 ounces mushrooms sliced
  • 3 cloves garlic minced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 cup sour cream
  • 2 tablespoons all-purpose flour

Method
 

  1. Season the beef strips with salt and pepper.
  2. In a skillet, brown the beef strips over medium-high heat.
  3. Remove the beef from the skillet and set it aside. In the same skillet, sauté the onions, garlic, and mushrooms until softened.
  4. Add the sautéed mixture to the crock pot along with the browned beef, Worcestershire sauce, thyme, and beef broth.
  5. Cover and cook on low for 6 to 8 hours or high for 4 to 5 hours.
  6. In a small bowl, whisk together the flour with a few tablespoons of broth to create a slurry.
  7. Stir the slurry into the crock pot about 30 minutes before serving.
  8. Finally, stir in the sour cream just before serving.
