Ingredients
  

  • 12 oz fettuccine
  • 1 cup sun-dried tomatoes chopped
  • 1 cup ricotta cheese
  • 1 tablespoon olive oil
  • 1 garlic clove minced
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Method
 

  1. Cook the fettuccine according to package instructions.
  2. In a medium bowl, whip the ricotta until smooth.
  3. Sauté minced garlic in olive oil over medium heat.
  4. Add chopped sun-dried tomatoes to the garlic and sauté for 2-3 minutes.
  5. Combine the cooked fettuccine with the sun-dried tomato mixture.
