Method
- Heat olive oil in a large pot over medium heat.
- Add chopped onion, garlic, carrots, and celery. Sauté until softened, about 5-7 minutes.
- Stir in the zucchini and bell pepper. Cook for another 3-4 minutes.
- Add the diced tomatoes, broth, oregano, and basil. Bring to a simmer.
- Stir in the cannellini beans and pasta. Simmer for 10-12 minutes or until the pasta is al dente.
- Season with salt and pepper to taste.
- Remove from heat and garnish with fresh parsley before serving.
