Wholesome Minestrone Soup for Cozy Nights

This hearty minestrone soup combines vibrant seasonal vegetables, tender beans, and aromatic herbs in a rich broth, making it a flavorful choice for cozy gatherings or a satisfying weeknight meal.

Ingredients
  

  • 2 tablespoons olive oil
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 2 medium carrots diced
  • 2 stalks celery diced
  • 1 zucchini diced
  • 1 bell pepper diced (any color)
  • 1 can 14 oz diced tomatoes
  • 1 can 15 oz cannellini beans, rinsed and drained
  • 4 cups vegetable or chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 cup small pasta e.g., ditalini, elbow
  • Salt and pepper to taste
  • Fresh parsley chopped (for garnish)

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion, garlic, carrots, and celery. Sauté until softened, about 5-7 minutes.
  3. Stir in the zucchini and bell pepper. Cook for another 3-4 minutes.
  4. Add the diced tomatoes, broth, oregano, and basil. Bring to a simmer.
  5. Stir in the cannellini beans and pasta. Simmer for 10-12 minutes or until the pasta is al dente.
  6. Season with salt and pepper to taste.
  7. Remove from heat and garnish with fresh parsley before serving.
